Roast salmon with potatoes & asparagus

Ingredients

Salmon, raw

1 fillet(s), medium

Potatoes, Raw

100 g

Asparagus, cooked

7 spear(s)

Lemon

1 zest(s) of 1

Lemon Juice, Fresh

1 teaspoon(s)

Parsley, fresh

1 tablespoon(s)

Instructions

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Place the potatoes in a saucepan, cover with water and boil for 5-10 minutes.
  2. Meanwhile, put the salmon on a baking tray and season well. Roast for 20 minutes until the fish is cooked though.
  3. Drain the potatoes, then chop into bite-size pieces and spread evenly on a baking tray. Season and roast for 30 minutes until golden, adding the asparagus spears for the last 10 minutes of cooking time.
  4. Serve the salmon with the potatoes and asparagus; garnished with parsley, lemon zest and juice.

Notes

If asparagus isn't in season, swap in your favorite roasted veggies such as broccoli, cauliflower, peppers, or onions in their place.
