This healthy version of a takeaway kebab is a firm favourite. The slaw has a healthy yogurt-based dressing, which goes perfectly with the spicy grilled chicken.

Ingredients

Brown Rice, dry

100 g

Chicken breast, skinless, raw

250 g, cut into small chunks

Lemon Juice, Fresh

4 teaspoon(s)

Piri piri seasoning

½ serving(s)

Olive Oil

1 teaspoon(s)

Cabbage

¼ portion(s), large, shredded

Red onion

¼ small, finely sliced

Carrots, raw

1 medium, grated

Low Fat Natural Yogurt

50 g

Caraway Seeds

½ teaspoon(s)

Coriander, fresh

2 sprig(s), or parsley

Instructions

  1. Cook the rice to pack instructions. Heat the grill and line the grill pan with kitchen foil. If you’re using wooden skewers, soak them in warm water for a few minutes to stop them from burning.
  2. Meanwhile, put the chicken in a bowl with the lemon juice, piri piri seasoning and oil and set aside. Combine the slaw ingredients, mix well and season to taste.
  3. Thread the chicken onto 2 skewers and grill, turning, for around 10 minutes, or until golden and cooked through. When the rice is cooked, drain and serve with the chicken and slaw.
