These oaty vegan waffles are crisp, fluffy and delicious.

Ingredients

Unsweetened skimmed oat drink

125 ml

Porridge oats

75 g

Banana

3 medium, roughly chopped (you’ll need 250g)

Plain Soya Yogurt

4 tablespoon(s)

Strawberries

200 g, hulled and quartered

Raspberries

150 g

Blueberries

150 g

Maple Syrup

2 teaspoon(s)

Instructions

  1. Put the oat milk, oats and bananas in a food processor and blitz until you have a smooth batter. Leave to stand for 20 minutes – the mixture should be thick, but pourable.
  2. Preheat a waffle maker according to its settings. Pour in the batter, being careful not to overfill – this mixture is enough to make 2 square waffles. Cook according to your waffle maker instructions until the waffles are cooked through and golden.
  3. Serve the waffles topped with the yogurt and berries, with the maple syrup drizzled over.

Notes

You can also make these in a silicone mould. Bake at 200°C, fan 180°C, gas mark 6 for 10-12 minutes or until set.
