Premium ham

24 slice(s), thin

Egg, whole, raw

12 medium, raw

Parmesan Cheese

2 tablespoon(s), grated

Cherry Tomatoes

50 g, chopped

Chives, Fresh

1 tablespoon(s), chopped

Instructions

  1. Preheat the oven to Gas Mark 5, 190°C, fan oven 170°C.Mist a 12 hole muffin tray with cooking spray. Place two pieces of ham on top of each other, then gather up the edges and pop into one of the holes in the muffin tray. Press the ham down to make a ‘case’ – it doesn’t matter if it gathers slightly in places. Repeat with the remaining ham to fill 12 holes.
  2. Crack 1 egg into each muffin cup, season with salt and pepper, then sprinkle the cheese evenly over the eggs, then top with the tomatoes.
  3. Bake for 15-20 until the egg is cooked to your liking. Sprinkle over the chives, and serve.
