This frittata comes together in minutes – and you can easily customise it to suit your taste buds.

Ingredients

Olive Oil

1 tablespoon(s)

Onion

1 large, sliced

Egg, whole, raw

8 large, raw

Fresh Herbs

30 g, chopped, mixed

Instructions

  1. Heat the olive oil in a nonstick ovenproof frying pan. Cook the onion over a medium heat for 6-8 minutes until soft.
  2. Beat the eggs, season and stir in 2 tbsp chopped mixed herbs of your choice.
  3. Heat the grill to high. Pour the egg and herb mixture over the onion, stir gently to combine, then cook over a low heat for 8-10 minutes, or until almost set. Cook under the grill for 3-5 minutes until fully set, then serve.
