Freekeh is made from young wheat grains that are roasted to give them an earthy, nutty flavour. Try it in this simple salad recipe.

Ingredients

Freekeh, dry

150 g

Cucumber

2 portion(s), medium, chopped

Mint, Fresh

6 g, shredded

Red onion

½ small

Olive Oil

1 tablespoon(s)

Nectarine

4 medium, wedges

Pork loin steak, lean, raw

400 g

Instructions

  1. Cook the freekeh according to the pack instructions. Cool slightly, then put in a large bowl with the cucumbers, mint and onion. Season and toss to combine.
  2. Mist a griddle pan with cooking spray and preheat over a medium-high heat. Put the nectarine slices on the griddle and cook, turning occasionally for 4-5 minutes or until golden and tender. Transfer to a plate. Cover loosely with foil to keep warm.
  3. Season the pork to taste. Spray the griddle pan with a little more cooking spray and cook the pork for 2-3 minutes on each side, or until cooked though. Serve the salad topped with the pork and griddled nectarines.
