Create a world of flavours with this variations on the classic Mexican snack of toasted filled flatbreads. It's perfect for sharing and lovely for lunch.

Ingredients

Red onion

1 small, finely sliced

Red pepper

½ medium, finely sliced

Olives, in Brine

50 g, black, halved

Sun Dried Tomatoes

30 g, roughly chopped

Oregano, Dried

1 teaspoon(s), level

Calorie controlled cooking spray

Light Mozzarella

50 g, grated

Light feta cheese

50 g, crumbled

Instructions

  1. Combine the onion, pepper, olives, sundried tomatoes and oregano in a small bowl.
  2. Mist a large frying pan with cooking spray and set over a medium heat. Add one wrap. Top with half the cheese, the vegetables and the remaining cheese. Add the other wrap and mist with cooking spray. Cook for 3-4 minutes until the base is browned and the cheese has melted. Turn and cook for another 2 minutes.
