Turkey breast mince, raw

500 g

Onion

1 large

Red pepper

1 medium, deseeded and chopped

Taco seasoning

2 tablespoon(s)

Tinned Tomatoes

1 can(s), large

Spinach

100 g

WW Wholemeal Wraps

2 individual, cut into bite size pieces

Half fat Cheddar cheese

80 g, grated

Coriander, fresh

2 tablespoon(s)

Spring Onions

2 medium

Sliced green jalapeños in brine

2 tablespoon(s), drained

Lime

Instructions

  1. Mist a large nonstick frying pan with cooking spray and fry the turkey mince over a medium-high heat for 5 minutes, until browned. Add the onion and pepper and cook, stirring, for 5 minutes. Stir in the taco seasoning, then add the chopped tomatoes and cook for 3 minutes - add a splash of water if the mixture is dry.
  2. Stir in the spinach and wraps and cook for 2 minutes, or until the spinach is wilted. Season to taste and scatter over the cheese. Cook for 2-3 minutes, until the cheese is almost melted, then scatter over the chopped fresh coriander, the chopped spring onions and the sliced jalapeño. Serve with lime wedges on the side.
