Fresh mint, green bean & tomato salad

This salad brings a taste of the Mediterranean to any alfresco meal

Ingredients

Green Beans

400 g

Olive Oil

½ tablespoon(s)

Vinegar, All Types

1 tablespoon(s), red wine vinegar

Dijon Mustard

1 teaspoon(s), heaped

Garlic

2 clove(s)

Mint, Fresh

10 g

Cherry Tomatoes

300 g

Instructions

  1. Cook the beans in a large pan of boiling water for 3-4 minutes, until just tender. Drain and refresh under cold running water, then drain well. Pat dry using kitchen paper, then transfer to a serving bowl.
  2. In a small bowl, whisk together the oil, vinegar, mustard and garlic. Season, then drizzle over the beans. Add the mint and toss to combine. Set aside to marinate for 5 minutes, before adding the tomatoes and tossing to combine. Garnish with the extra mint leaves, then serve.
