Tucking into a toasted cheese sandwich is one of life’s great pleasures, and this meltingly good version is the one members turn to over and over again.

Ingredients

Medium fat soft cheese

50 g

Shallots

2 medium, finely diced

Wholegrain Mustard

4 teaspoon(s), level

Pickled gherkins, no added sugar

5 small, drained, 1, drained and finely chopped, plus 4 extra gherkins, sliced, to serve.

Farmhouse White Bread

8 slice(s), medium

Half fat Cheddar cheese

45 g, grated

Calorie controlled cooking spray

Instructions

  1. In a small bowl, combine the soft cheese, shallots, mustard and chopped gherkin, then season to taste
  2. Spread the mixture over each of the 8 slices of bread. Scatter the grated cheese over 4 of the bread slices then sandwich with the remaining bread, soft-cheese-side down.
  3. Mist a large nonstick frying pan with cooking spray then set over a medium heat. Cook the sandwiches for 2-3 minutes on each side until the bread is lightly toasted and the cheese has melted – you may need to do this in batches. Serve with the extra sliced gherkins on the side.

Notes

Instead of shallots, use 8-12 drained and chopped silverskin pickled onions.
