Cannellini beans and chorizo on toast

Ingredients

Chorizo Sausage

60 g, cubed

Onion

1 medium, sliced

Garlic

1 clove(s), sliced

Chilli, green or red

½ individual, chopped

Tomato

2 large, deseeded and chopped

Cannellini Beans, cooked

1 can(s), large, drained

Tomato ketchup

1 tablespoon(s)

Parsley, fresh

2 tablespoon(s), chopped

Coriander, fresh

2 tablespoon(s), chopped

Instructions

  1. Add the chorizo to a hot frying pan and cook until golden and starting to release its oil. Add the onion and cook until soft. Add the garlic and red chilli and cook for 1 minute more.
  2. Tip in the tomatoes and lower the heat. Cook for 2 minutes, then add the beans, ketchup and 100 ml water and continue to cook for 10 minutes, stirring occasionally. Season with salt and pepper, add the herbs and mix well
  3. Spoon the beans and chorizo over the toasted bread and serve immediately
