Ingredients

Brown rice, boiled

55 g

Carrots, raw

1 medium, coarsely grated

Cucumber

¼ individual, medium, cut into 1cm pieces

Celery, Raw

1 stick(s), thinly sliced

Sweetcorn, frozen, boiled

40 g

Lettuce

30 g, shredded cos lettuce

Tuna in spring water, drained

1 can(s), medium, drained

Olives, in Brine

4 individual, pitted black olives

Olive Oil

1 teaspoon(s)

Vinegar, All Types

1 tablespoon(s)

Dijon Mustard

1 teaspoon(s), heaped

Boiled egg(s)

1 medium, quartered

Instructions

  1. Layer the cooked brown rice, grated carrot, cucumber pieces, celery slices, sweetcorn, lettuce, tuna and olives in a glass jar or plastic container.
  2. Whisk the olive oil, red wine vinegar and Dijon mustard together in a bowl. Season to taste. Top the salad with a quartered boiled egg and drizzle over the dressing to serve.
