Recipe by WW Coach Wendy from, 'Meal-plan your way to weight loss cookbook. On sale at major bookstore retailers from September 27. These savoury bites are crispy on the outside, and tender and cheesy on the inside. The perfect protein-rich snack or lunch box staple.

Ingredients

Panko breadcrumbs

10 g

Tuna, canned in springwater, drained

1 185g can, flaked

Red onion

1 small, finely chopped

Fresh flat-leaf parsley

1 tbs, chopped

Garlic

1 clove(s), crushed

Whole grain mustard

1 tsp

99% fat-free, plain or natural yoghurt, unsweetened

50 g

Mozzarella

¼ cup(s), grated, grated, (30g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat air fryer at 180°C for 5 minutes
  2. For the tuna mix, place all ingredients in a small bowl and mix until well combined. Divide the mixture into 8 portions and shape into balls. Carefully roll each ball in panko to coat.
  3. Lightly spray a shallow heatproof dish with oil (check it fits into your air fryer). Place balls in prepared dish. Cook in air fryer at 180°C for 6 minutes. Carefully turn balls, then air fry at 180°C for a further 6 minutes or until golden.

Notes

TO REFRIGERATE: Store bites in a reusable container for up to 3 days. Serve chilled or reheat in air fryer or microwave. If you don’t have an air fryer, place balls on a baking paper-lined tray. Lightly spray with oil and cook in a 180°C oven for 15 minutes or until lightly browned, turning halfway through.
