60 g, cheese

Fresh chives

1 tbs, chopped

Wholemeal sandwich thins

1 thin, (1 x 40g) split

Cooked skinless chicken breast

100 g, shredded

Rocket

20 g, baby leaves

Instructions

Combine quark cheese and chives in a small bowl. Season with salt and pepper.
Toast sandwich thin. Spread 1 sandwich thin half with quark mixture. Top with chicken and rocket. Sandwich with remaining sandwich thin half. Serve.

TIP: Quark is a soft, fresh, creamy cheese with a mild tangy flavour. Find it in the chilled cheese cabinets of major supermarkets. If unavailable, use low-fat cottage cheese.
