Want a tasty snack in a hurry? This zingy, flavour-packed dip is made in minutes – just blitz everything in a food processor and you’re done!

Ingredients

Lemon(s)

1 medium

Tuna, canned in springwater, drained

1 185g can

Reduced-fat ricotta cheese

cup(s), deli-fresh, (80g)

99% fat-free, plain Greek yoghurt, unsweetened

100 g

Fresh flat-leaf parsley

¼ cup(s), chopped

Ground cayenne pepper

¼ tsp, plus extra to serve

Instructions

  1. Finely grate the rind from lemon. Cut lemon in half and squeeze out 2 tablespoons juice.
  2. Pulse tuna, ricotta, yoghurt, cayenne, lemon juice, half the lemon rind and 2 tablespoons parsley in a food processor until combined but still chunky in texture. Process a little more if you prefer a smoother consistency. Season with salt and pepper.
  3. Transfer to a bowl. Sprinkle with remaining lemon rind, parsley and a little extra cayenne pepper. Serve.

Notes

Add it: A scattering of mini capers would compliment this dip nicely. Serve with veggie sticks or tortilla chips on the side.
