Ingredients

Extra lean beef sausage

8 thin, (8 x 58g sausages)

Red capsicum

2 medium, sliced

Garlic

2 clove(s), crushed

Smoked paprika

1 tsp

Canned diced tomatoes

2 400g can, (2 x 400g cans)

Canned cannellini beans, rinsed, drained

2 400g can, (2 x 400g cans)

Fresh flat-leaf parsley

2 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Add sausages and cook, turning, for 6-8 minutes, or until browned on all sides. Remove from pan and set aside.
  2. Add capsicums to pan and cook for 4-5 minutes or until softened
  3. Add garlic and paprika and cook for 2 minutes. Add tomatoes and 200ml water. Stir to combine and season with salt and pepper.
  4. Return sausages to pan and simmer for 10 minutes. Stir in beans and cook for 2 minutes or until heated through. Serve stew sprinkled with parsley.

Notes

TIP: Serve with mashed potatoes. The stew can be frozen in an airtight container for up to 3 months.
