No time to prepare dinner? This Satay is ready in 20 minutes and still has all the delicious flavour.

Ingredients

Powdered coconut milk

35 g, powder

Sweet chilli sauce

2 tbs

Reduced salt soy sauce

1 tbs

Smooth or crunchy peanut butter

1 tbs

Beef sirloin steak, raw

320 g, (Buy 400g), fat trimmed

Coleslaw mix, without dressing

240 g

Lebanese cucumber

3 medium, thinly sliced

Oil spray

1 x 3 second spray(s)

Instructions

  1. Stir the coconut powder with 2 tablespoons hot water in a saucepan until powder dissolves. Add the sweet chilli sauce, soy sauce and peanut butter. Cook, stirring, over medium heat for 1-2 minutes or until smooth. Cover to keep warm.
  2. Heat a small non-stick frying pan over medium-high heat. Lightly spray the steak with oil and season with salt and pepper. Cook for 3 minutes each side for medium or until cooked to your liking. Set aside for 2 minutes to rest. Thinly slice.
  3. Place the salad mix, cucumber and beef in a medium bowl. Add half the satay sauce and gently toss to combine. Transfer to a serving plate. Drizzle with the remaining sauce and serve with the rice.

TIP: Find coconut powder in the baking aisle of the supermarket
