If you’re looking for a vegetarian pasta dish then this is the one for you! Made with zucchini pasta, this is a fun and interesting take on a classic favourite.

Ingredients

Zucchini

2 large

Avocado

¼ medium

Basil pesto

1 tbs

Lemon juice

1 tbs

Cherry tomatoes

100 g, quartered

97% fat-free cottage cheese

½ cup(s), (125g)

Instructions

  1. Using a julienne peeler or spiraliser, slice zucchini into spaghetti-like strips.
  2. Combine avocado, pesto and juice in a medium bowl until smooth. Add zucchini strips and tomato and toss to combine. Top with cottage cheese and season with salt and pepper.

Notes

SERVING SUGGESTION: Baby spinach leaves, wholegrain bread(contain gluten) and lemon wedges.
