Keep the ingredients for this divine dish on hand to whip up any night you feel like something special in less than the time it takes to get takeaway delivered

Ingredients

Peanut oil

1 tbs

Raw peeled prawns

500 g, deveined, peeled, tails intact, (buy 1 kg)

Garlic

2 clove(s), thinly sliced

Fresh ginger

2 tsp, finely grated

Green shallot(s)

2 individual, cut into 2cm lengths

Soy sauce

1 tbs

Oyster sauce

2 tbs

Chicken stock

2 tbs

Fresh red chilli

1 g, thinly sliced

Sesame seeds

1 tsp, toasted

Instructions

  1. Heat a wok over high heat. Add half the oil and heat for 30 seconds. Stir-fry prawns for 2–3 minutes or until prawns change colour and are just cooked through. Transfer to a plate.
  2. Reheat wok over high heat. Add remaining oil and heat for 30 seconds. Add garlic, ginger and shallots and stir-fry for 30 seconds. Add soy and oyster sauces and stock and stir-fry for 30 seconds.
  3. Return prawns to wok and stir-fry for 1 minute or until heated through. Serve prawns sprinkled with chilli and sesame seeds.

Notes

SERVING SUGGESTION: Steamed broccolini and snow peas, plus jasmine rice.TIP: If buying unpeeled prawns you will need 1kg for this recipe.To toast sesame seeds, place in a dry frying pan and cook over medium heat, stirring, for 3–5 minutes or until golden.
