Pan-fried apricot and goat’s cheese sandwich

This toastie is the perfect combination of sweet, creamy and tangy flavours, with the added benefits of calcium and protein found in goat’s cheese.

Ingredients

Soft goat's cheese

40 g

Honey

1 tsp

Fresh lemon rind

½ tsp

Wholegrain bread

4 slice(s), (4 x 35g slices)

Apricot

2 individual, thinly sliced

Reduced fat oil spread

2 tsp

Instructions

  1. Combine cheese, honey and rind in a small bowl. Spread 2 slices bread with cheese mixture. Top with apricot and sandwich with remaining bread.
  2. Heat a medium non-stick frying pan over medium-high heat. Spread both sides of each sandwich with spread. Cook sandwiches for 1–2 minutes each side or until bread is golden and toasted. Cut in half or into fingers to serve.

Notes

TIPS: You can use reduced-fat fresh ricotta cheese instead of goat’s cheese. You could also cook these sandwiches in a preheated sandwich press or a jaffle maker. Experiment with a variety of fresh fruit fillings, such as mango, plums, pears, apples or nectarines.
