For a hit of sweet flavour, try these chewy little treats. Toasted oats add fibre, while the hint of coffee flavour will perk you up. Coating the balls in almond meal before rolling helps reduce stickiness.

Ingredients

Rolled oats, dry

½ cup(s), (45g)

Dried dates

250 g, pitted

Instant coffee powder

2¼ tsp

Ground cinnamon

¼ tsp

Apple cider vinegar

½ tsp

Almond meal

¼ cup(s), (30g)

Instructions

  1. Stir oats in a small frying pan over medium heat for about 3 minutes or until lightly toasted. Remove from heat and cool slightly.
  2. Transfer oats to a food processor. Add dates, coffee powder, cinnamon, vinegar and ½ teaspoon salt. Pulse until dates and oats are finely chopped and mixture starts to form clumps.
  3. Use damp hands to roll level tablespoons of mixture in almond meal and shape into 16 balls.

Notes

TIP: Apple cider vinegar brings a hint of acidity to this recipe, to balance out the sweetness of the dates.
