Ingredients

Smoked paprika

2 tsp

Ground allspice

1 tsp

Dried oregano

1 tsp

Skinless chicken breast

500 g, (4 x 125g)

Olive oil

1 tbs

Potato(es)

750 g, halved and quartered

Red onion

2 medium, cut into thin wedges

Red capsicum

2 medium, coarsely chopped

Garlic

4 clove(s)

Fresh flat-leaf parsley

1 x 3 second spray(s)

Instructions

  1. Combine paprika, allspice and oregano in a large container with a lid. Add chicken and 2 teaspoons of the oil. Season with salt and pepper. Close container lid and shake to coat chicken. Marinate in fridge for 30 minutes.
  2. Preheat oven to 200°C. Place potatoes, onions, capsicums and whole garlic cloves in a large baking dish. Drizzle over remaining oil and season with salt and pepper. Toss to combine. Bake for 20 minutes.
  3. Meanwhile, lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook chicken for 2-3 minutes each side or until golden. Transfer chicken to tray with vegetables. Bake for a further 15 minutes or until chicken and potatoes are cooked through. Serve sprinkled with parsley.
