Take the ever popular Greek salad and add a modern twist with the addition of artichokes.

Ingredients

Garlic

1 clove(s), halved

Fresh lemon rind

1 tsp, finely grated

Lemon juice

¼ cup(s), (60ml)

Olive oil

1 tbs

Dried oregano

1 tsp

Cos lettuce

1 baby, leaves sliced

Rocket

2 cup(s), (60g) baby leaves

Artichoke hearts, canned, rinsed, drained

400 g, (1x400g can)

Lebanese cucumber

1 medium, halved lengthways, sliced

Red capsicum

1 small, or yellow variety, sliced

Cherry tomatoes

150 g, grape variety, halved

Red onion

½ small, thinly sliced

Black olives, drained

6 individual, kalamata variety, pitted, thinly sliced

Reduced fat feta cheese

½ cup(s), (130g) crumbled

Instructions

  1. Rub inside of a large salad bowl with cut sides of garlic. Discard garlic. Add lemon rind, lemon juice, oil and dried oregano and whisk until well combined. Season with salt and pepper.
  2. Add lettuce, rocket, artichoke, cucumber, capsicum, tomatoes, onion and olives and toss to coat. Sprinkle with feta cheese to serve.
