A portable snack that satisfies at any time of day, these little bars are full of delicious good-for-you ingredients, such as bananas, seeds, nuts and grains.

Ingredients

Dried apricots

90 g

Dried cranberries

70 g

Raisins

70 g

Rolled oats, dry

1 cup(s), (90g)

Sunflower seeds

½ cup(s), (75g)

Wheat bran, unprocessed

¼ cup(s), (30g)

Pecans

50 g, or walnuts, chopped

Skim milk powder

½ cup(s), (50g)

Plain wholemeal flour

30 g

Ground cinnamon

1 tsp

Banana(s)

1 medium, ripe, cut into chunks

Egg(s)

2 medium

Maple syrup

100 ml

Vanilla bean extract, alcohol free

1 tsp

Instructions

  1. Preheat oven to 180°C. Lightly spray a 20cm x 30cm slice tin with oil and line base and sides with baking paper, extending paper 2cm above the edge of tin.
  2. Process dried fruit, oats, sunflower seeds, bran, nuts, milk powder, flour, cinnamon and ½ teaspoon salt in a food processor until dried fruit is finely chopped. Add banana, eggs, maple syrup and vanilla and pulse until just combined.
  3. Press mixture into prepared tin. Bake for about 15 minutes or until golden and firm when lightly touched with fingertips. Place on a wire rack and cool completely in the tin. Use lining paper to lift slice from the tin. Cut into 32 bars.

Notes

TIP: To save time, you can use the WW pull string food processor to chop the nuts.
