Ingredients: 0.333 cup(s) 99% fat-free, plain Greek yoghurt, unsweetened (80g); 1 tsp Fresh lemon rind finely grated; 2 tsp Lemon juice; 1 tbs Apple cider vinegar; 0.25 cup(s) Fresh coriander coarsely chopped; 6 individual Green shallot(s); 200 g Green cabbage finely shredded; 1 medium Carrot(s) coarsely grated; 1 medium Green apple, unpeeled cut into matchsticks

1 tsp, finely grated

Lemon juice

Apple cider vinegar

Fresh coriander

¼ cup(s), coarsely chopped

Green shallot(s)

Green apple, unpeeled

1 medium, cut into matchsticks

Instructions

To make dressing, stir yoghurt, lemon rind and juice, vinegar and coriander in a small bowl until combined. Season with salt and pepper.
Cut shallots into 7cm lengths, then cut into thin strips. Combine shallots, cabbage, carrots and apple in a large bowl. Drizzle over the dressing and toss well.
