This smooth, creamy, sweet treat couldn’t be simpler to make. Simply process cottage cheese until smooth, then add sweetener, cocoa powder, and vanilla extract—no cooking required, and no chilling necessary either. You can make it ahead, too, if you’d like; spoon it into bowls and refrigerate for up to three days.

Ingredients

97% fat-free cottage cheese

2 cup(s), (500g)

Monk fruit sweetener

cup(s), (75g)

Cocoa powder

2 tbs

Vanilla bean extract, alcohol free

1 tsp

Instructions

  1. In a food processor, process the cottage cheese on high speed until smooth, 1 to 2 minutes, stopping to scrape the sides of the bowl as necessary. Add the monk fruit sweetener, cocoa powder, and vanilla; process until well combined, 30 seconds to 1 minute. Spoon into bowls and serve.
