Ingredients

Plain flour

1 cup(s), (150g)

Caster sugar

3 tsp

Baking powder

2 tsp

Egg(s)

1 medium

Skim milk

1 cup(s), (250ml)

Sunflower oil

1½ tbs

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat mini waffle maker (10cm diameter) and lightly spray both cooking surfaces with oil.
  2. Sift flour, sugar, baking powder and ¼ teaspoon salt into a medium bowl and make a well in the centre. Whisk egg, milk and oil in a separate bowl. Add egg mixture to dry ingredients and gently stir to combine.
  3. Slowly pour ¼ cup batter onto the bottom cooking surface of the waffle maker. Pull cover down to enclose waffle. Cook for 2-3 minutes, until golden brown and cooked through. Using a silicone spatula, transfer waffle to a plate and cover to keep warm. Repeat with remaining batter to make 8 waffles in total, lightly spraying cooking surfaces with oil again halfway through. Serve.

Notes

Serve with fresh mixed berries and a dollop of 99% fat-free plain yoghurt.
