These spicy chicken parcels are easy to make and carry. Perfect for a work lunch or even a healthy picnic lunch.

Ingredients

Chicken breast mince

500 g

Garlic

1 clove(s), crushed

Ground paprika

2 tsp

Coleslaw mix, without dressing

400 g

Low fat tzatziki

130 g, (1/2 cup)

Wholemeal wrap

160 g, (4x40g wraps)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine the mince, garlic and paprika in a medium bowl. Season with salt and pepper. Shape the mixture into 16 balls.
  2. Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook the meatballs, turning, for 6 minutes or until browned and cooked through.
  3. Combine the coleslaw with half the tzatziki and toss to combine. Place the wraps on serving plates. Top with coleslaw mixture, meatballs and remaining tzatziki. Roll tightly to enclose the filling.

Notes

Have a meal at the ready – make a double batch of meatballs and freeze half of the raw meatballs. Simply defrost before cooking.
