Enjoy a flavourful cheesy chicken burger featuring juicy chicken breast mince, melted extra light cheddar cheese, and a medley of greens on toasted ciabatta bread. With a touch of Dijon mustard for added zing, this satisfying burger is topped with mixed salad leaves, sliced beetroot, fresh tomato, and pickled gherkin. Perfect for a hearty meal, this recipe serves four and can be prepared in just 25 minutes, making it a delicious option for lunch or dinner.

Ingredients

Chicken breast mince

400 g

Extra light cheddar cheese

40 g, grated

Ciabatta bread

160 g, 2x8cm wide, halved, split, toasted

Dijon mustard

1 tbs

Mixed salad leaves

40 g

Beetroot, canned in brine, drained

80 g, sliced

Tomato(es)

2 medium, sliced

Pickled gherkin, drained

2 individual, thinly sliced

Extra light cheddar cheese

35 g, thinly sliced

Instructions

  1. Combine the mince and grated cheese in a bowl. Season with salt and freshly ground black pepper.
  2. Shape the mince mixture into four patties. Lightly spray a non-stick frying pan over medium-high heat. Cook the patties for 4-5 minutes each side or until browned and cooked through.
  3. Place the ciabatta pieces on a baking tray. Spread half with the mustard. Top with the mixed leaves, beetroot,tomato, mince patties, gherkin and sliced cheese. Place under a preheated grill for 2-3 minutes or until the cheese melts. Transfer to plates and top with remaining ciabatta pieces.

Notes

SERVING SUGGESTION: Salad made of shredded red cabbage and sliced apple. Drizzle with 2 tablespoons of no-fat yoghurt mixed with 1 teaspoon Dijon mustard and a squeeze of lemon.
