Chargrilled tropical fruit skewers with coconut

Ingredients

Mango

50 g, cut into 2 cm pieces

Pineapple

50 g, cut into 2 cm pieces

Paw paw or papaya

50 g, cut into 2 cm pieces

Kiwifruit

1 medium, 2 slices, halved

Apricot jam

2 tsp

Shredded or desiccated coconut

2 tsp, toasted

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat a chargrill over high heat. Thread pineapple, mango, pawpaw and kiwifruit, alternately, onto 2 wooden skewers (see note). Brush jam over both sides of skewers and lightly spray with oil.
  2. Cook skewers for 1 minute each side or until lightly charred. Serve sprinkled with coconut.

Notes

SERVING SUGGESTION: 99% fat-free plain yoghurt. TIPS: To toast coconut, toss it in a small non-stick frying pan over medium heat until golden. If time permits, soak wooden skewers in cold water for 10 minutes before using to stop them burning during cooking. Add it: 1 tsp toasted chopped macadamia nuts. Swap it: Pawpaw for ½ banana.
