Cajun tofu tacos

Take tofu for a spicy Mexican- fusion walk on the wild side!

Ingredients

Tomato(es)

4 medium, chopped

Fresh coriander

cup(s), chopped

Lime juice

2 tbs

Corn

4 cob(s), large, (4xcobs) husks removed

Flour tortilla(s)

320 g, (8 x 40g)

Olive oil

2 tbs

Green capsicum

2 medium, thinly sliced

Red onion

2 medium, thinly sliced

Cajun seasoning

1 tbs

Firm tofu

300 g, cut into 8 thin slices

Avocado

1 medium, mashed

Cos lettuce

4 baby, halved

Shaved parmesan cheese

½ cup(s), (40g)

Instructions

  1. Combine tomato, coriander and half the juice in a small bowl.
  2. Preheat a barbecue over medium-high heat (see note). Cook corn on grill, turning, for 12–15 minutes or until tender. Using a sharp knife, remove kernels from cobs. Discard cobs.
  3. Cook tortillas on grill for 30 seconds each side or until warmed through. Wrap in foil to keep warm.
  4. Meanwhile, drizzle flat plate with 1 teaspoon oil. Cook capsicum and onion, stirring, for 5 minutes or until tender. Place kernels, capsicum and onion in a medium bowl and toss to combine.
  5. Sprinkle spice mix over both sides of tofu. Drizzle flat plate with remaining oil. Cook tofu for 2 minutes each side or until golden and warmed through.
  6. Spread avocado over half of each tortilla. Top with corn mixture, tofu and tomato salsa. Fold to enclose filling. Serve with lettuce sprinkled with parmesan and remaining juice.

Notes

TIP: You can also cook the corn and tortillas on a chargrill and the capsicum, onion and tofu in a large non-stick frying pan.
