Braised asparagus with crunchy crumbs

Ingredients

Garlic

4 clove(s), bruised

Asparagus

4 bunch(es)

Olive oil

2 tbs

White bread

60 g, crusty variety, cut into 5mm pieces

Semi dried tomatoes, not in oil

2 tbs, finely chopped

Fresh flat-leaf parsley

2 tbs, finely chopped

Instructions

  1. Bring garlic and 2 cups (500ml) water to the boil in a wide frying pan over medium-high heat. Add asparagus. Reduce heat and simmer, uncovered, for 3 minutes or until asparagus is tender. Drain and discard garlic. Transfer asparagus to serving dish and season with salt and pepper.
  2. Heat half the oil in same cleaned pan over medium-high heat. Cook bread, stirring, for 3 minutes or until golden and crisp. Remove from heat. Stir in tomatoes and parsley.
  3. Serve asparagus topped with crumb mixture and drizzled with remaining oil.
