The chunkiness in this sweet berry-vanilla beverage is a real hit. Stir with a cinnamon stick to add a hint of spice.

Ingredients

Granulated stevia sweetener

2 tbs

Vanilla bean

1 whole, split, seeds scraped

Cinnamon quill

1 whole

Frozen blackberries

150 g, thawed or fresh

Soda water

3 cup(s), 750ml

Instructions

  1. Place stevia, vanilla bean and seeds, cinnamon stick and 2/3 cup (160ml) of water in a small saucepan. Cook, stirring, over medium heat until the stevia dissolves. Simmer until the syrup is reduced by half. Set aside to cool slightly. Discard the vanilla bean and cinnamon stick.
  2. Combine the blackberries and sugar syrup in a large jug. Muddle with the end of a wooden rolling pin until the blackberries are gently crushed.
  3. Divide the berry mixture between glasses. Top with soda water and ice cubes.

Notes

SERVING SUGGESTION: 30mL vodka per person. Top with cinnamon stick to serve.
