Soaking oats overnight gives them a lovely creamy texture. Be sure to use traditional rolled oats as instant oats are more processed and not as filling. Bircher muesli is great for a quick breakfast straight from the fridge. Simply add the fresh fruit and seeds to serve.

Ingredients

Rolled oats, dry

cup(s), (60g)

Apple juice no added sugar

cup(s), (160ml)

99% fat-free, plain or natural yoghurt, unsweetened

½ cup(s), (120g)

Apple(s)

1 medium, peeled, finely chopped

Sunflower seeds

2 tsp

Fresh blueberries

½ cup(s), (80g)

Instructions

  1. Place oats, juice and yoghurt in a medium bowl and stir to combine. Cover and refrigerate overnight.
  2. To serve, stir in apple and top with sunflower seeds and blueberries.

Notes

COOK'S TIP: To change it up, serve with different fruits, seeds or nuts. Try chopped pear, raspberries and toasted flaked almonds or whatever combo you like. TO REFRIGERATE: Store bircher muesli (without fruit and seeds) in a reusable container for up to 3 days. Stir in apple and top with sunflower seeds and blueberries just before serving.
