Artichoke pate with pastrami

For something a bit different, serve up this pate platter so you can dip and cruch your way through lunch.

Ingredients

Artichoke hearts, canned, rinsed, drained

280 g, (1 x jar or can)

Light cream cheese

¼ cup(s), (50g)

97% fat-free cottage cheese

50 g, (1/4 cup)

Green shallot(s)

1 individual, (green), finely chopped

Beef pastrami

100 g, sliced

Light rye bread

4 slice(s), (40g each)

Celery

2 stick(s), cut in to batons

Carrot(s)

2 small, cut into batons

Instructions

  1. Place the artichokes, cream and cottage cheese and shallot in a food processor. Process until well combined. Season with salt and freshly ground black pepper.
  2. Spoon the artichoke pâté into small serving bowls. Serve with the pastrami, bread, celery and carrot.

Notes

You can use purchased rare roast beef instead of pastrami. Both meats are available from the deli section of the supermarket.
