Warm Roasted Chicken, Grape and Apple Salad

This main course salad is delicious - and the speed and convenience can't be beaten!

Ingredients

Fresh lemon juice

2 tbsp(s)

Apple

2 medium, cored and chopped, one red, one green

Grapes

125 gm, halved

Raisins

25 gm

Chives

2 tsp(s), chopped

Plain lowfat yogurt

2 tbsp(s)

Table salt

1 tsp(s), and freshly ground pepper

Lettuce

1 cup(s), chopped

Olive oil

2 tbsp(s)

Uncooked boneless skinless chicken breast

225 gm, roasted and chopped

Sunflower seeds

½ tbsp(s), roasted

Celery

4 cup(s), chopped

Instructions

  1. Put the lemon juice into a large bowl and add the apples, tossing to coat. Add the grapes, raisins, celery, chives and yogurt. Season with salt and pepper, then toss well to mix.
  2. Arrange the lettuce on to 4 serving plates and spoon the salad on top.
  3. Heat the oil in a frying pan and add the chicken, stir-frying it until crispy on the outside. Spoon onto the salads.
  4. Sprinkle with sunflower seeds and garnish with snipped chives.
