This deconstructed sandwich works its magic without any bread at all. Instead, skewers hold the fillings together—we like the wooden ones best for their added traction, but metal will also work. For a Buffalo chicken version, swap in grilled chicken chunks brushed with hot sauce, and carrot and celery chunks. Use light blue cheese dressing for dipping. For an Italian deli hero version, swap in lean ham and light mozzarella, plus pickled peppers, olives, and tomatoes. Mix oil, vinegar, and dried oregano for dipping to hit all the right notes.

Ingredients

Cooked turkey breast without skin and bone

2 pound(s), cut into 36 cubes

Grape tomatoes

36 medium, or cherry tomatoes

Iceberg lettuce

1 medium head(s), or romaine lettuce, cut into 36 small chunks

Cooked turkey bacon

9 slice(s), cut into 36 pieces

Light mayonnaise

Uncooked scallions

Instructions

  1. Onto each of 12 (10- to-12-inch-long) skewers, alternately thread 3 turkey cubes, 3 tomatoes, 3 lettuce chunks, and 3 pieces turkey bacon.
  2. In a small bowl, stir together mayonnaise, vinegar, and scallions.
  3. Serve skewers with scallion mayonnaise drizzled on top.
  4. Serving size: 2 skewers
