Vine-ripened tomatoes, fresh basil and smoky mozzarella have natural affinities—add balsamic-infused pasta and you've got a wonderful meal.

Ingredients

Uncooked pasta

8 oz, fusilli, or other spiral pasta

Balsamic vinegar

1 tbsp(s), or more to taste

Olive oil

2 tsp(s)

Dried oregano

½ tsp(s)

Cherry tomatoes

1 cup(s), or grape tomatoes, halved

Fresh basil

½ cup(s), fresh, chopped

Part-skim mozzarella cheese

½ cup(s), shredded, smoked, diced

Table salt

tsp(s), or to taste

Black pepper

pinch(es), or to taste

Instructions

  1. Cook pasta according to package directions, without added salt or fat. Drain and transfer to a large bowl. Add vinegar, oil and oregano; toss to coat.
  2. Fold in tomatoes, basil and mozzarella; season to taste with salt and pepper. Serve warm or chilled. Yields about 1 cup per serving.
