No cooking required for this fresh take on a noodle bowl. Leaving the spiralized zucchini noodles raw keeps them crisp when tossed with a homemade dressing made with fresh grated ginger, nutty sesame oil, and tangy rice vinegar. When paired with roasted salmon and asparagus, this makes a great cold lunch or light dinner.

Ingredients

Unseasoned rice vinegar

1½ tbsp(s)

Toasted sesame oil

2 tsp(s)

Ginger root

¾ tsp(s), grated

Kosher salt

¼ tsp(s)

Crushed red pepper flakes

tsp(s)

Fresh zucchini spirals

3 cup(s)

Uncooked scallions

½ cup(s), sliced

Sheet-Pan Salmon & Asparagus

2 serving(s)

Instructions

  1. In a medium bowl, whisk vinegar, oil, ginger, salt, and pepper flakes. Add zucchini and scallions. Slice asparagus spears on an angle and add to vegetables; toss well to coat. Flake salmon into chunks and gently toss with vegetables.
