Tender beef topped with a creamy cheese sauce is the perfect dish to treat Mom on Mother’s Day.

Ingredients

Uncooked lean trimmed sirloin beef

Dijon mustard

Reduced-fat sour cream

Reduced calorie mayonnaise

Store-bought horseradish

1 tbsp(s)

Blue cheese

1 tbsp(s), crumbled

Fresh lemon juice

Worcestershire sauce

Uncooked green snap beans

Instructions

  1. Preheat oven to 425°F.
  2. Coat beef evenly with mustard and place in a baking pan lined with aluminum foil; roast for 35 minutes for medium doneness, or longer until desired degree of doneness.
  3. Meanwhile, combine remaining ingredients in a medium bowl; chill until ready to serve.
  4. Slice tenderloin into 1-inch thick slices and drizzle with blue cheese sauce. Yields about 4 ounces of beef, 2 tablespoons of sauce and 1 cup of green beans per serving.
