Fresh basil adds a bang of flavour to this recipe, but in a pinch, you can use a teaspoon of dried basil instead.

Ingredients

Cooking spray

4 spray(s)

Artisan flatbread

1 flatbread(s), about 3 oz

Plum tomato

2 medium, thinly sliced

Garlic clove

1 clove(s), medium, minced

Shredded part-skim mozzarella cheese

¾ cup(s)

Dried oregano

½ tsp(s)

Fresh basil

2 tbsp(s), fresh leaves, thinly sliced

Instructions

  1. Preheat oven to 375°F. Spray baking sheet with cooking spray.
  2. Place flatbread on baking sheet and bake just until lightly crisp, about 4 minutes.
  3. Remove from oven and arrange tomatoes on flatbread and sprinkle with garlic. Top evenly with mozzarella and oregano. Bake until cheese is melted, about 4 minutes. Sprinkle with basil. Cut into 4 wedges.
  4. Serving size: 2 wedges
