A delicious orange-ginger compote tops rich-tasting but low point Greek Yogurt. Try this for a light dessert or decadent (seeming!) breakfast.

Ingredients

Orange

2 large, seedless

Honey

1 tbsp(s)

Ginger root

1 tbsp(s), fresh, minced

Plain lowfat Greek yogurt

2 cup(s)

Slivered almonds

4 tsp(s)

Peppermint leaves

4 tsp(s), minced

Instructions

  1. Peel oranges and segment over a small bowl. Cut segments in half and squeeze membrane over bowl to gather as much juice as you can. Combine orange segments, honey, juice, and ginger –toss well to combine. Spoon ½ cup yogurt into each dish,, top with ¼ cup compote, 1 tsp almonds, and 1 tsp mint.

Notes

For a pretty presentation you can layer the yogurt and compote in parfait glasses –garnish with mint and almonds and serve. Compote can be made several days ahead. To serve as a dessert stir a little honey and orange zest in with the plain yogurt before topping with compote.
