Ingredients

Olive oil

Uncooked bacon

2 slice(s), smoked, chopped

Shallots

2 small, sliced

Uncooked leek

1 medium, sliced

Garlic

2 clove(s), large, sliced

Bay leaf

3 leaf/leaves

Fresh thyme

1 sprig(s)

Rosemary

1 tbsp(s), fresh, chopped

Sweet potato

1 medium, diced

Cremini mushrooms

1 cup(s), quartered

Uncooked boneless skinless chicken breast

3 breast(s), chopped

Canned diced tomatoes

3 cup(s), 1 can (796 ml)

Red wine

4 fl oz, (1/2 cup)

Store-bought chicken stock

2 cup(s)

Olives

8 large, kalamata, chopped (1/4 cup)

Instructions

  1. Preheat oven to 350F
  2. In a large pot or Dutch oven add the oil and sauté bacon. Add shallots, leeks. Add garlic. Add bay leaves, thyme, and rosemary.
  3. Add sweet potato, mushrooms, chicken, stir and simmer. Add diced tomatoes, wine and stock. Add olives.
  4. Transfer to oven and bake for 45min - 1 hour.
