With sautéed mushrooms as the base, this veggie melt makes a warm lunch that’s healthy, satisfying, and flavourful.

Ingredients

WW 100% Whole Wheat Bagel

1 bagel(s), split and toasted

Mushrooms

1 cup(s), sliced

Kale

1 cup(s), leaves, packed, chopped

Pesto sauce

1 tbsp(s), basil variety

Table salt

1 pinch(es)

Black pepper

1 pinch(es)

Tomato

4 slice(s)

Fat-free cheddar cheese

2 slice(s)

Instructions

  1. Preheat broiler. Heat nonstick skillet set over medium-high heat; cook mushrooms, kale, pesto, salt and pepper for 5 to 8 minutes or until mushrooms are tender and starting to brown and kale is wilted.
  2. Divide mushroom mixture between 2 bagel halves on small baking sheet. Top each bagel half with 2 tomato slices and 1 Cheddar cheese slice.
  3. Serving size: 1 bagel

Notes

Substitute spinach or arugula for kale if preferred.
