This easy dish together in just five minutes because it relies on putting leftovers to use. Quinoa, which adds a nutty flavour to this dish, is incredibly easy to cook. It's important to rinse quinoa before using, even if the package says it's pre-rinsed. Rinsing the quinoa gets rid of its natural coating that has a soapy taste to it. Feel free to swap out different vegetables depending on what you have on hand. This makes an excellent one-dish meal or you can serve it with a salad or pita bread. Enjoy reheated or at room temperature.
