Savoury and garlicky with a delicious finishing hit of nutty sherry wine, this lightning-fast Spanish shrimp dish is sure to be a hit at your table. Serve it with whole-wheat baguette slices so none of the luscious sauce goes to waste. If you don’t have sherry wine, you can use a teaspoon of sherry vinegar instead.

Ingredients

Uncooked shrimp

1 pound(s), large, peeled and deveined

Kosher salt

¼ tsp(s)

Extra virgin olive oil

3 tbsp(s)

Crushed red pepper flakes

½ tsp(s)

Garlic

8 clove(s), large, thinly sliced

Fresh parsley

2 tbsp(s), finely chopped

Sherry wine

2 tbsp(s), dry variety

Lemon zest

1 tsp(s)

Instructions

  1. In a medium bowl, toss together the shrimp and salt; set aside.
  2. Heat the oil in a large nonstick skillet over medium. Add the pepper flakes and garlic; cook until the garlic just begins to brown, about 1 minute. Add the shrimp mixture; cook, turning the shrimp occasionally, until the shrimp are cooked through, about 3 minutes. Stir in the parsley, sherry, and lemon zest; cook 1 minute. Serve the shrimp mixture with the baguette.
  3. Serving size: about ⅔ cup shrimp mixture
