Light mayonnaise

Shallots

Water

Fresh tarragon

Dijon mustard

Cooked lentils

Hard boiled egg

1 large, quartered or sliced

Cooked green beans

½ cup(s), halved, French variety (haricot vert)

Yellow bell pepper

¼ cup(s), chopped, chopped

Grape tomatoes

Olives

6 medium, pitted, halved

Instructions

  1. Combine mayonnaise, shallot, water, lemon juice, oil, tarragon, and mustard in a small bowl; set aside.
  2. Place lentils in a serving bowl; top with egg, green beans, peppers, tomatoes, and olives. Drizzle with dressing; season with salt and pepper if desired.
