Keep pouches of precooked rice in your freezer to make quick and easy bowls like this one.

Ingredients

Cooking spray

3 spray(s)

Cooked lean ham

cup(s), diced

Canned black beans

¾ cup(s)

Ground cumin

½ tsp(s)

Ground oregano

½ tsp(s)

Fresh lime juice

1 tsp(s), plus an extra lime wedge

Table salt

1 pinch(es), optional

Cooked medium grain brown rice

½ cup(s)

Fat free salsa

¼ cup(s), fresh variety recommended

Cilantro

2 tbsp(s), chopped

Instructions

  1. Coat a medium skillet with cooking spray; heat over medium-high heat. Add ham; cook, stirring often, until browned, about 2 minutes. Remove from skillet; set aside.
  2. Add beans, cumin, oregano, and a couple tsp water (enough to make mixture saucy) to same skillet; heat over medium heat, stirring, until hot, about 1 minute. Remove from heat; stir in lime juice and season with a pinch salt (optional).
  3. Put rice in a bowl; top with ham, beans, salsa, and cilantro. Serve with a lime wedge.
