Ingredients

Olive oil

¼ cup(s)

Fresh lemon juice

2 tbsp(s)

Dijon mustard

1½ tbsp(s)

Table salt

1 pinch(es)

Broccoli

2 head(s), florets, tender stems, chopped fine

Uncooked radicchio

1 cup(s), chopped

Shredded part-skim mozzarella cheese

2 oz, grated, about 1/2 cup

Dried cranberries

¼ cup(s)

Almonds

¼ cup(s), sliced, unsalted, chopped

Hard boiled egg

4 large, grated or chopped fine

Instructions

  1. In a medium sized bowl, whisk olive oil, lemon juice, mustard, and salt; set aside.
  2. In a separate larger bowl, combine broccoli, radicchio, cheese, cranberries, and almonds.
  3. Add dressing to bowl and toss. Gently fold in eggs.
