This super-fast and oh-so-good snack makes for the perfect mini-meal. Try preparing it for one of your recommended between mean snacks and feel free to mix it up.

Ingredients

Mini cheddar rice cakes

Fat free salsa

cup(s), medium or hot, well-drained

Pickled jalapeno peppers

3 tbsp(s), chopped, or to taste

Low-fat shredded cheddar cheese

½ cup(s)

Guacamole

¼ cup(s)

Fat free sour cream

Instructions

  1. Preheat oven or toaster oven to 400°F. Arrange rice cakes close together on a baking sheet.
  2. Spoon well-drained salsa over rice cakes. Sprinkle with jalapeno and cheese.
  3. Bake until cheese is melted and nachos are heated through, about 10 minutes. Spoon guacamole and sour cream over nachos. Serve warm. Yields 6 nachos per serving.
